Violets
can be found in wooded areas in the temperate
regions of the world. Wild violets are much
smaller than the cultivated violet pictured to the
left. Because of the fragile integrity of the woodlands
at this point in human history, we strongly suggest
that you cultivate violets for culinary use. Violets
prefer shade but can be cultivated in the sun. We
have also successfully grown violets in pots. The
seeds should be sown in the fall and once you have
a successful plant it will return each year.
Both the
flower and the leaves are edible and can be tossed
into salads. Violet leaves are mild enough to be
used as a substitute for lettuce. Violet flowers
can be crystallized and used for decorations on
cakes. Violets leaves can be cooked but the flowers
cannot.
Caution!
Violet roots should not be used as they can be poisonous
even in moderate to small amounts. Their preparation
and use is best left to herbal professionals.
